Banana Oats Breakfast Bread

Wouldn’t it be nice to wake up in the morning with the sweet smell of a cake or a bread baking wafting through the house? That is what always happens when I bake this delicious and healthy banana oats bread for breakfast. What makes this bread special is very less use of fat in it. (To know more about fats used in baking please refer to my blog on various fats  that are available in the market.)  Inspite of having only 3 tbsp of oil in it, it is so moist and delicate thanks to the bananas and the buttermilk. Buttermilk has naturally occurring stabilisers which help to retain moisture in the cake. Other advantage of having buttermilk is that it is acidic in nature and reacts well with the soda bicarb to produce good leavening. Banana puree is also acidic in nature and together with the buttermilk helps to make the cake light and moist.

Banana Oats bread

Due to the natural sweetness of bananas, the amount of sugar required is less. Bananas are power house of nutrients and give the much needed energy boost to head start the day when introduced in a breakfast bread. A part of the flour is replaced with rolled oats and whole wheat flour or Atta to increase the nutrition level. Oats are rich in fibre and antioxidants and good to be consumed for breakfast. I prefer adding walnuts to this bread to add crunchy texture and also for the obvious health benefits. You could replace walnuts with almonds or pecan nuts. Sunflower seeds also would be a good addition. Here is the recipe for the bread.

 

Ingredients Quantity
 1 Flour 160 g
2 Atta or wholemeal flour 70 g
3 Oats 50 g
4 Baking powder 2 tsp
5 Baking Soda 3/4 tsp
6 Salt 1/2 tsp
7 Mashed Bananas 300-325 g
8 Sunflower oil 3 tbsp
9 Brown Sugar 150 g
9 Eggs 2
10 Buttermilk 1/2 cup
11 Walnuts/Almonds Chopped 1/3 cup
12 Vanilla essence 1 tsp
Procedure
1 Preheat the oven to 190 degrees celsius. Grease a loaf tin.
2 Sift together flour, soda bicarb and baking powder. Add the salt, oats and coarsely chopped walnuts to it and mix.
3 In a bowl, with a wire whisk, mix together, eggs, mashed bananas, buttermilk, vanilla essence, oil and sugar.
4 Fold in the flour mixture into the banana mixture till just combined.
5 Deposit the batter in the greased loaf tin and bake for about 45-50 minutes or till done.
6 Let it cool, then un-mould and cut into slices.

So now you know what to do when you have plenty of overripe bananas left in you pantry!
